Sweet and sour chicken soup

INGREDIENTS: SERVE 4 PEOPLE

1) 100g of sliced Chicken breast

2) 2 teaspoons of vegetable stock powder

3) 1 teaspoon of sugar

4) 1 teaspoon of sesame oil

5) 1 teaspoon of lime juice (and 1 tablespoon tamarind sauce for optional)

6) 1 teaspoon of fish sauce or Soya sauce

7) ½ teaspoon of chili paste (chilli jam)

8) ½ litre of boiling water

9) 1 table spoon of vegetable oil

10) 4 tablespoons of finely chopped pineapple

11) 1 tomato thinly sliced

12) ½ onion thinly sliced

13) 4 Okras or ½ Zuchinni finely sliced

14) Pinch of pepper

METHOD:
STEP 1:
Marinate chicken with stock powder, sugar, sesame oil for minimum of 30 minutes.
STEP 2:
Heat oil to medium hot. Add marinated chicken cook for 1 minute. Add pineapple and onion cook for 1 more minute.
STEP 3:Add boilling water, lemon juice (tamarind sauce), fish sauce, chilli paste, pepper & bring to the boil.
STEP 4:
Add tomato and okra. Bring back to the boil. Cook for 2 minutes.
NOTE: If preparing a head of time, complete step 1 to step 3, then just before serving do step 4.
