Aubergine (Eggplants) in Clay-pot

INGREDIENTS: SERVE 4 PEOPLE

1. 200g Aubergine peeled cut into 4

2. ½ litre of vegetable oil

3. ½ litre of boiling water

4. 2 tablespoons of soy sauce

5. 2 teaspoons of sugar

6. 1 teaspoon of paprika powder

7. ½ teaspoon of pepper

8. 4 spring onion finely chopped

Ps: Grilled Aubergine (eggplants) over flame instead of fried
METHOD:
STEP 1:
Fry aubergine in hot oil until golden brown. Drain the oil.
STEP 2:
Put aubergine back in a fry pan. Add boiling water and gentle stir for 10 seconds. Drain water.
STEP 3:
Add aubergine into a clay pot add spring onion, paprika, pepper, sugar, and soya sauce, mix then cook for 5 minutes until thick like caramel.
SERVE WITH STEAMED RICE OR BREAD ENJOY!
