We’re here to guide you as you master the culinary skills behind iconic dishes like the beloved PHỞ, the famously sizzling BÁNH XÈO, and comforting Caramelized Pork.
Our classes focus purely on time-honored Vietnamese traditions, emphasizing the delicate balancing of yin and yang flavors – the perfect harmony of sweet, sour, hot, and salty that makes Vietnamese food so unique and healthy. You’ll explore the delicious culinary diversity of Vietnam’s regions:
From the North: Master the art of Hanoi’s famous PHỞ, with its hot, clear beef broth fragrant with fresh herbs – traditionally a breakfast staple, but perfect anytime.
From the Central Region: Learn to create the abundance of fried and steamed delights, including the crispy, golden BÁNH XÈO (savory Vietnamese pancakes), named for the distinct “sizzle” they make in the hot pan. These are perfect dipped in authentic fish sauce or shrimp paste.
From the South: Explore signature dishes like the hot and sour catfish soup and the sweet, rich caramelized pork cooked in a clay pot, reflecting the Southern love for slightly sweeter marinades using sugar, shallots, garlic, chili, and caramel.

History:
The owner’s personal cooking journey began at the tender age of 12 in her grandmother’s bustling kitchen. It was there, cooking with love and dedication, that Mrs GIOAN first learned to prepare consistently fresh, tasty, and healthy traditional Vietnamese dishes. This passion led her to open her first restaurant – GIOAN RESTAURANT right here in downtown Hoi An, where she shared these cherished family recipes with customers. Transforming this experience into Gioan Cookery School allows us to pass on these precious culinary secrets to you.
